Sherry is a unique and versatile category of fortified wine from the Jerez region in southern Spain, made primarily from the Palomino grape and aged using the traditional solera system. What sets Sherry apart is its wide range of styles, from bone-dry to lusciously sweet, each offering distinct flavour profiles. Dry styles like Fino and Manzanilla are light, crisp, and saline, aged under a layer of yeast called flor, which protects the wine from oxidation.
In contrast, Oloroso is aged oxidatively, resulting in a richer, nuttier profile with flavors of walnut, toffee, and spice. Amontillado bridges the two, starting under flor before oxidizing, offering complexity and depth. Sweet styles, such as Pedro Ximénez (PX) and Cream Sherry, are intensely sweet and syrupy, with notes of fig, raisin, and molasses. Sherry is known for its umami-like complexity, making it a favorite with food pairings, from tapas and cured meats to desserts and blue cheese.
