Botrytis Riesling, also known as noble rot Riesling, is a luxurious and intensely flavoured sweet wine made from Riesling grapes affected by Botrytis cinerea, a beneficial fungus that dehydrates the grapes, concentrating their sugars, acids, and flavors. This natural process results in wines that are lusciously sweet yet balanced by Riesling’s signature high acidity, creating a vibrant, mouth-coating experience. The flavour profile often includes honey, apricot, candied citrus peel, marmalade, peach, and spice, with complex layers of botrytis character such as saffron or ginger.

 

These wines are typically golden or amber in colour and have excellent ageing potential, developing even greater depth over time. Botrytis Rieslings are most famously produced in Germany (Beerenauslese and Trockenbeerenauslese styles) and Austria, and are enjoyed as elegant dessert wines, especially when paired with blue cheese, fruit tarts, or foie gras.
