Ouzo is a dry, anise-flavoured spirit that is strongly associated with Greece. Its taste is dominated by anise, giving it a distinct licorice-like flavour, often with hints of other spices like fennel, coriander, or star anise.

The origins of ouzo production in Greece are thought to be linked to "rakı", a similar anise-flavoured drink from the Middle East, with traditions possibly tracing back to ancient Greek distillation practices.
