Dessert wines, as the name suggests, are sweet wines typically enjoyed with or as dessert. These wines are crafted to have higher levels of residual sugar than dry wines, resulting in a luscious and often complex flavour profile.
Common production methods include late harvesting (where grapes are left on the vine to concentrate sugars), botrytization (infection with "noble rot"), and fortification (addition of a neutral grape spirit). Dessert wines can showcase a wide range of flavours, including honeyed fruit, caramel, nuts, and spices.
Darren De Bortoli created Noble One at our family winery in 1982, to this day it is still one of the most awarded wines in history. More than four decades after this pioneering Botrytis Semillon took the world by storm, internationally acclaimed Noble One remains the benchmark of Australian ‘Botrytis’ dessert winemaking
Pepper Tree Limited Release Sticky Pig Late Harvest Pinot Gris is a dessert wine style made from Pinot Gris grapes grown on our Wrattonbully vineyard. This unique wine has intense sweetness and balanced acidity. Pears and green apples fill the nose; rich nectar surrounds the palate while maintaining a delicate and seductive finish.
