Grapes were carefully sorted, before being whole bunched pressed directly into French oak barrels. Barrels spent 9 months on their yeast lees prior to selective blending by the winemaking team. The Bird in Hand Chardonnay consists of 40% new oak from premium tight grained French oak with the balance from barrels 1 – 4 years old.
On the palate, this Chardonnay showcases intense flavours of almond meal, creamed honey and fresh papaya. Focused acidity creates palate length and will ensure ageing ability.
