De Salis Wines is a family-owned boutique winery perched on the northern slopes of Mount Canobolas in Orange, New South Wales. Specialising in premium, cool-climate wines, De Salis is known for its minimal-intervention philosophy and estate-grown fruit, producing refined expressions of Chardonnay, Pinot Noir, and sparkling wines.
The vineyard sits at an elevation of over 1,000 metres, offering ideal conditions for slow ripening and complex flavour development. With a strong focus on traditional winemaking techniques, including wild fermentation and barrel aging, De Salis Wines has built a loyal following for its elegant, character-driven wines that reflect both the volcanic soils and high-altitude terroir of the region.
